Yum!


I just finished making a YUMMY spinach dip for a party that we are going to tonight, and thought I'd share the recipe. It is quick, easy and tasty. Just the thing to take to a party. It can be accompanied by veggie, chips, bread, or whatever. The first time that I had it, it was served in King's Hawaiian Sweet Bread (you can find this at Walmart, up front by the deli). You hollow out the middle of the loaf and cut it up to eat with the dip, leaving the edges (but cutting through them so that they could be taken out as individual pieces. Hmmmm...not making much sense, huh? I will take pictures when I get it cut and post them before I take the dip to the party. Anyway, it is super good, so I thought I'd share the recipe. It comes from the Knorr Vegetable recipe mix.

Knorr Spinach Dip

1 package (10 oz.) frozen chopped spinach, thawed and squeezed dry. (I chop it fairly fine, even though it is already somewhat chopped)
1 container (16 oz.) sour cream
1 cup Best Food Real mayonnaise (I used light)
1 package Knorr Vegetable recipe mix (in the soup aisle, usually)
1 can (8oz.) water chestnuts, chopped (optional--I used 1/2 can)
3 green onions, chopped (optional)

Combine all ingredients and chill about 2 hours. Serve with your favorite dippers. Enjoy!

There is also a recipe for Hot Spinach & Artichoke Dip on the package that looks super yummy, too. I'll have to try that one next. I'll try to post those pictures a little later.

After you cut the center part out, you cut the outside edge about every 1 1/2 inches, so that the remaining edge pieces can be taken out to eat as well...and then just go around the bottom with the knife so that the pieces can be torn off more easily.
Cut the remaining pieces into chunks that can be dipped in the spinach dip

So this dip is a mainstay in Bay Area parties since the 70s, cept we use sourdough bread. And now I would make it with thickened youghurt (the thicker Greek youghurt or youghurt that you have let strain through cheesecloth in a colander for at least a few hours or over night to thicken it)--it's still good and it transforms it from a fattening dish to a healthy one (or so you can tell yourself at least). And we add garlic.

I've never made spinach dip - I don't know that I've even eaten it more than once or twice. Maybe I should master this recipe for parties up here. It sounds really good. Love, Charlotte

YUM. I'm not allowed to make this dip anymore. I would just eat the whole recipe. My favorite is to eat it with Pita Chips. Ooh, I get hungry just thinking about it!
